A friend made a big batch of salsa a couple of weekends ago. It was good, but a little on the hot side as he used hot peppers that he brought with him from Texas.
So, I created my own version without the hot peppers.
1 can whole tomatoes, undrained
2 tablespoons olive oil
2 tablespoons chopped green onions
2 cloves, minced
3 tablespoons chopped fresh cilantro (if keep cilantro frozen, it makes it easier to chop)
Combine tomatoes and oil in blender or food processer, process until chopped. Pour into 1 quart saucepan and stir in green onions and garlic. Bring to a boil over medium heat. Cook for about 3 minutes. Remove from heat and stir in cilantro.
