Ms. Annie's Pecan Bark

Ms. Annie, another one of the great cooks of Larkinsville, is the sweetest lady and has two of the most talented daughters that I know.  Ms. Annie and her husband, Fred (I always called them Fred and Annie because they were  "Fred and Annie to me", members of the Methodist Church in Larkinsville, were there everytime the church doors opened.  Mr. Fred always wore overalls except on Sundays and he dressed in his Sunday best.

Ms. Annie's Pecan Bark

1 cup unsalted butter (no substitutes)
1 cup firmly packed brown sugar
1 cup chopped pecans
24 graham cracker squares

Preheat over to 350 degrees.  Line a 10 by 15 inch cookie sheet with aluminum foil.  Lightly grease the foil.  Place the graham cracker squares on the cookie sheet in one layer (should fit exactly 24).  Sprinkle pecans evenly over the top and set aside.  Melt butter in a small sauce pan.  Add brown sugar, and stir until the mixture boils.  Boil for 1 minute.  Pour mixture evenly over graham crackers and pecans.  Bake for 10 minutes.  Remove from the oven and immediately place the hot cookie sheet in the freezer.  Remove the pan after one hour and break the break into pieces.  This candy does not need to be refrigerated.
